- 2 tbsp yellow mustard (binder)
- ¼ cup kosher salt
- ¼ cup black pepper
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- ½ cup beef broth (for spritzing)
- Wood pellets (hickory, oak, or mesquite)
Instructions
- Prepare Brisket – Trim fat, coat with mustard, season with spices.
- Smoke Brisket – Preheat Traeger to 225°F, smoke fat-side up for 6–8 hours, spritzing with broth.
- Wrap & Finish – Wrap at 165°F, smoke until 200–205°F, then rest for 1 hour before slicing.
Notes
- Use a water pan inside the Traeger for added moisture.
- Slice against the grain for the most tender bites.
- Wrap in foil and store in a cooler to keep warm for hours.
