Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix wet ingredients: In a large bowl, whisk together mashed bananas, Fage Greek yogurt, melted butter, brown sugar, eggs, and vanilla extract until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine mixtures: Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Add mix-ins (optional): Gently fold in walnuts or chocolate chips if using.
  6. Bake: Pour batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
