A moist and healthy banana bread made without butter, using oil or yogurt for a lighter texture.


Ingredients

  • 3 ripe bananas (mashed)
  • 2 eggs
  • ½ cup honey or maple syrup
  • ¼ cup oil (coconut, olive, or vegetable) or ½ cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat or all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)

Instructions

  • Preheat & Prep – Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Mix Wet Ingredients – Mash bananas and mix with eggs, sweetener, oil/yogurt, and vanilla.
  • Combine Dry Ingredients – Whisk flour, baking soda, salt, and cinnamon, then fold into the wet mixture.
  • Bake & Serve – Pour into pan, bake for 50-55 min, cool, slice, and enjoy!
