Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • ½ cup vegetable oil (or canola oil)
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)

Instructions

  • reheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a large bowl, mash the bananas and mix in eggs, oil, sugar, and vanilla extract until smooth.
  • Sift in the flour, baking soda, baking powder, salt, and cinnamon (if using). Gently fold until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Slice and enjoy!
