Description

- 3 ripe bananas, mashed
- 2 large eggs
- ½ cup vegetable oil (or canola oil)
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon (optional)
Instructions
- reheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the bananas and mix in eggs, oil, sugar, and vanilla extract until smooth.
- Sift in the flour, baking soda, baking powder, salt, and cinnamon (if using). Gently fold until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy!
Notes
- Use very ripe bananas for the best sweetness and flavor.
- You can add ½ cup of chopped nuts or chocolate chips for extra texture.
